Canned Lentils (3c)
Canned Tomatos (2c)
Canned Coconut Milk (1c)
Garlic Infused Olive Oil (6 tbsp)
Lime Juice (2 count)
Water (3/4c)
Spices:
Ginger (3tspn)
Ground Turmeric (3tspn)
Garam Masala (2 1/4tspn)
Ground Cumin (1 1/2tspn)
Gound Coriander (1 1/2tspn)
Begin cooking the rice in the rice cooker.
In a large saucepan, Add canned lentils, coconut milk, water, turmeric, garam masala, cumin, and coriander. Stir to mix. Bring mixture to a brief boil. Reduce heat to low, cover, and let simmer for at least 5 minutes, stirring occasionally.
Stir in lime juice, salt, and pepper
Serve over rice, topped with garnishes,
